LONG MOULDING AND CURLING UNITS


When in Rome do as the Romans do.” Each country has different requirements and needs when it comes to the ideal long moulding and curling result. BackTech offers a wide variety of long moulding units, thereby meeting the many different needs of each country.

SHEETING HEADS

This component consists of two height-adjustable rollers, placed on top of each other. The round dough piece is drawn in by the rollers and according to the setting is being formed to an oval or round flat piece.
 

If you want to curl round pieces that weigh more than 100 g (not part of the standard edition but feasible depending on customer requirements), BACKTECH recommends positioning two rollers each consisting of a pair of rollers one after the other.

LONG MOULDING UNITS

  •  with a height-adjustable driven upper belt
    The upper part of this component is equipped with a height-adjustable driven upper belt. With a frequency converter, the speed of the belt is infinitely variable and can run both forward and backward. Furthermore, the unit allows for extremely gentle dough processing. Differences in shape and size are achieved by adjusting the belt speed and changing the machine direction.

    Examples:

    * If upper and lower belt run at the same speed and the upper part is set to an incline, flat, round dough pieces (e.g. hamburger) can be produced.
    * If upper and lower belt run in opposite direction and at high speed, especially long dough pieces can be produced.
  • with a height-adjustable pressure board
    With a height-adjustable pressure board, pieces are long moulded. Cylindrical dough pieces of exactly the same length can be produced simply by setting the desired side limit.

CURLING UNITS

BACKTECH's curling units consist of the following components:

  • Infeed conveyor belt
  • Pre-pressure roller, adjustable
  • Flour duster
  • Sheeting head with a pair of rollers
  • Curling with
    • Curling flaps: Dough pieces are being long moulded with a sheeting head, then lifted with flaps and curled with the upper long moulding unit.
      Examples: Baguette, Hot Dog, Sandwich
    • Special curling belt: Dough pieces are being long moulded with a sheeting head and then curled with the curling belt. Recommended for the production of dough pieces with many lyes.
      Examples: multi-cereal rolls, curled rolls
    • Curling net: A net is placed over the dough pieces and is then used to curl them.
      Examples: Baguette, Hot Dog, Sandwich
  • Long moulding upper unit
